Spring salads

The sun is out again! I’ve been dosing up on my vitamin D along with trying to eat healthy. Salads are my cooking ‘specialty’, the salad below can be made with pretty much any fruit and veg to provide a nice balance of sweet and savoury.

Leaves – mixed
Nuts – walnuts, cashews or pine nuts all work
Cheese – high quality parmesan or mozarella
Veg – cherry tomatoes, spring onions, peppers, avocado
Fruit – blueberries, apples or pears
Dressing: olive oil, balsamic vinegar or hoummous

Mix it all up and enjoy served with some rye or sourdough bread.
